Reykjavik Marathon in Iceland followed by some time in the Volcanic waters of the Blue Lagoon, followed by a nice evening of pillaging with some Vikings. Have it pencilled it for 2009. 
Second choice would be the Medoc Marathon in France. Wine at every water stop? Oysters. Put me down for a predicted finishing time of 7 hours....not sure if that would be for the full marathon or just to the second stop.

Tough question, Tammy. 
Would I do Athens again? Seeing the acropolis come into view and finishing in the marble stadium, watching the doves released at the start. It's amazing. 
Or follow Friendly -- er, I mean canalrunner, to Reykjavik? 
So many to consider. Ireland, France, safariathon? W-o-w! 
Okay, yup, if only one ... Iceland it is.
