I ad libbed on a recipe I had seen in a magazine a while ago and found a great light sub for ice cream cravings.<br>
As a cake:<br>
3 cups Cool Whip ( use whatever version of it you like- I used "light" )<br>
1 small package of vanilla pudding mix ( you could use sugar free to lighten it up even more)<br>
1 can crushed pineapple.<br><br>
Fold ingredients together until mixed well<br><br>
cut ANgel food cake into several layers and "ice" layers with above mixture.<br><br><br>
I also took the left over whipped mixture and froze it, and it was a good substitute for ice cream.<br>
I have ideas to try this same recipe but use the equivalent amounts of strawberries and juice instead of pineapple and I bet it would be yummy!

Is there any whipped cream that doesn't have trans fats? I was going to buy a tub the other day for my pudding and was so disappointed to see hydrogenated oils listes as like the second ingredient!<br><br>
I love to make "ice cream" sammiches with low fat graham crackers and FF whipped cream. Freeze.<br><br>
And if you have extra calories for the day, smear PB on the crackers first. YUMMMMMMMMMMMMMM!

I made just the cream/fruit mixture with strawberries and was correct. Frozen, it is very good, and somehow quite filling as well.
