I know all you long term veg dudes and dudettes are probably rolling your eyes at all my "new discoveries" but this is just too much fun! I made a vegetarian sloppy joe mix tonight that I found in the health food section of the supermarket. It was awesome, and hard to tell it was not ground beef, except it wasn't as greasy, which is a plus. I'm guessing you can use this for anything that you'd put ground beef in: shepherds pie, chili, meat sauce for pasta??

I am looking for more recipes now. Now if I can only find a suitable substitute for seafood, I will be all set!

Yeah, that is tough. Worthington Foods had a pretty good product named Tuno. Morningstar Farms bought it and then stopped making it. I think there's a fake scallop product, but never tried it.

It's great that you're so excited, Genie. And you know what? You're posts are energizing, and remind me of foods that I haven't eaten in a while but love.

I have a good "mock tuna" recipe with white beans if you are interested.

Heh. My very first job was in a fast food type place (local place, not a chain) and their "chili" which they put on hot dogs used TVP. I used to think it was foul, but only because I figured they used it to save money. Now I think it was healthier than using beef. I don't remember having it more than once. Then again, I didn't really like any of the food there...

I think I wrote that one down when you posted it in another thread. It's really the shellfish and filets I am going to miss. I LOVE seafood, all of it, and ate it often, especially in the last year or two. I haven't been a big cow eater for a long time, and chicken bores me, so they weren't hard to give up. But I miss my fish....

I've used TVP for a great fake chicken salad! Prepare it with some vegetable broth, let it cool down. Mix in some mayo (or nayonnaise), chopped celery, onion, whatever (grapes, walnuts, etc.), season to taste, and let sit for an hour or two in the fridge. It's great cos you can mix up a TON of it, and it stays pretty good for a couple of days.

I jsut made this for lunch! i used tvp, rehydrated it in broth, then added 3 tbs of Veganaise, sweet relish, diced celery and onion, splash of mustard. YUMMY! Thanks Durt!

(genie- i could not find TVP at Kimberton, but Whole Food in Devon had it in their baking aisle. It may be at Kimberton, but the people were not friendly today and they were out of tofu tahini spread!)

I know you can use this in place of ground beef in loose things, like sloppy joes or meat sauce & chili, but can you make "meatballs" with it like you mold ground beef? I use a mix of TVP and lentils for a meatless meatloaf but I haven't figured out a substitute for meatballs yet. Being Italian, this is important! Any thoughts??

Meri, Giant also has TVP in the natural foods aisle, down at the bottom with all the Bob's Red Mill products too. That's where I ended up finding it. And the tasty mix, although going forward I will make my own, for sloppy joes.

I read on the internet that there is more than one style of TVP..bigger chunks? That I haven't seen, I've only seen the smaller, more like ground beef kind. I think I am gonna try that fake chicken salad, that sounds yummy.
