Tofu Scramble<br>
------------------<br><br><br>
1 cup diced onion<br>
.75-1 cup diced carrots<br>
1 cup thinly sliced button mushrooms<br>
1 lb tofu, firm or extra firm, crumbled with a fork<br>
corn from one ear of corn<br>
curry powder<br>
soy sauce<br>
scallions finely sliced<br><br><br><br>
In a skillet, heat up some oil over medium high heat. Saute onions for 5 minutes. Add carrots and saute for a few minutes. Add mushrooms and cook until soft. Add tofu, corn, a splash of soy sauce and curry powder to taste. (i use a healthy portion of curry powder!!!! the more the better it will taste). Cook until thoroughly heated through, stir in scallions.<br>

I keep seeing variations of this in veggie cookbooks and wanting to try it. Is there a fake ham product out there? I've discovered Smart Bacon, which I wasn't too fond of, but it'd be yummy, I think, to put a little "ham" in this too. Or the Morningstar Sausage Crumbles. And a little hot sauce, more like a Mexican version. With black beans?
