I'm looking for something I can mix up and have on hand to add some hot water to whenever I get a craving (which is often). I've been getting by with swiss miss and other store-bought mixes, but they've all got palm oil or partially hydrogenated cottonseed/soybean oil, and I try to avoid that stuff.
stipulations:
1. It needs to be something I can just add water to. I'm lactose-intolerant, but I can handle a little powdered milk on occasion.
2. I'm allergic to all things soy, so I try to avoid it as much as possible (it's not a deadly allergy or anything, I just get an itchy rash.) (sure you all wanted to know).
3. any suggestions regarding use of marshmallows, cinnamon, etc., are most welcome
lay 'em on me!

can you drink almond or rice milk?

in a saucepan, combine 1 c. almond or rice milk, 1 T sugar (you may not need any sugar; rice and almond milks are typically sweetened - taste it before using to make sure), and 1.5 T unsweetened cocoa powder. whisk until frothy and cook until it is hot (don't let it come to the boil). add a pinch of salt and a 1/4 t vanilla extract if you want (again, rice milk can be flavoured with vanilla, and almond milk typically has some salt, so taste before using).
