It's Friday but the way things are going, it's likely I'll have to come in over the weekend.

Dinner tonight is oven roasted salmon, brown & white rice, and hopefully veggies I can unearth from somewhere. I need to go to the grocery store. Oh and wine....very important the wine after the week I've had.

Sorry about your bad week, Hobey. I'll probably be singing that tune in another week or so. I'm about to get slammed with work.

I'm not a very good Catholic, since we're having crockpot chicken (thanks 4 Boys Mom!), mashed potatoes and whatever frozen vege I have, collards I think.

Something at Panera and then I'm going to the gas station to get candy and a coke some nodoz and tylenol pm. I think I may get some pizza too for when I get hungry at 3 am.

I'm not liking life right now. I will like it better after 1130 tomorrow.

So me 'n the boys are on our own and I have errands to run too. Hopefully not a fastt food dinner. yuck. Maybe leftovers

Not sure yet, but we have options since we FINALLY made to the store last night. Probably either salmon from a recipe they were sampling at the store last night or chicken scallopini from the runner's world recipe http://www.runnersworld.com/article/...1954-0,00.html. So foodies- what is chicken scallopini? I've always looked at this recipe and thought it isn't really "scallopini" but it's good so who cares, but I'm curious.

I've always considered scallopini as meat that has been pounded thinly, pan-fried in a mix of butter/EVOO, and then topped with a pan sauce made with the brown bits left over after sauteeing.

Yeah the nodoze is to keep me awake in the wee hours and the tylenol pm puts you to sleep afterwards. When you wake up you have this weird sense of calm and your wide awake.

This is the first time since my first round of undergrad that I have had to use the combo. I hate my MBA right now.

Thanks Hobey! my suspicions were right, this is yummy stuff but it isn't scallopini, every time I've eaten it I've wondered about that.
So what's the difference between scallopini and piccata? just that piccata is breaded?

The pan sauce in a piccata (means sharp in Italian) has lemons & capers. Scallopini is the name of the cut. Technically a schnitzel is a scallopini. Confused yet?

Yep! You're already WAY past my knowledge in the kitchen! Although I have made chicken piccata, just didn't know it was the lemon sauce that made it piccata
