<p>I bake and utilize baked-mashed sweet taters/butternut squash/[canned] pumpkin in all sorts of recipes; but have never seen the flour.</p>

<p>I am avoiding wheat flour, but it is needed in some recipes (cheese sauces).  When we were on vacation we picked up a bag of Sweet Potato Flour and one of Asparagus Flour.  They were both a bit pricey.</p>

<p>We had some of the Sweet Potato flour in a sauce last night, and it was very tasty.  I have seen some wonderful recipes for breads and muffins, neither of which I will be attempting, but the guidelines seem to indicate that you can replace up to 1/4 of the wheat flour with Sweet Potato flour.</p>

<p>interesting. i have used other flours, rice flours, chickpea flours, etc, but never seen sweet potato flour. How is it made? Chickpe flour is just ground dried chickpeas, and rice flour is ground dried rice.</p>

<p>The particular brand I have is cubed (in skin) and infrared dried twice, then hammer milled by the farmer.  It comes out about the size of brown sugar and has the consistency of coarse flour.</p>

Sounds good! We use a lot of almond flour and coconut flour in Paleo cooking... Sweet Potato flour would be allowed also. *excited*

Yes, the price is a drawback and does hold me back a bit on purchasing as much of the other flours as I'd like to. I'm looking for someplace that sells it more in bulk than in just the small packages. Let me know if you run across anything like that.<br><br>
