Well we finally had the salmon last night.

Carnitas with guacamole and tortillas tonight. Nothing like rubbing a pork shoulder with some salt, tossing it in the oven, and forgetting about it for a few hours. I may mix up some margaritas to go with.

What's for dinner at your house?

felt bad about my inital dinner choice, so I am supplementing with leftovers from last night - homemade pepper-crusted tenderloin with potatos lyonnaise. mmmm....

LOL!! Thin mints are a HUGE weakness of mine - I could eat the whole darn sleeve of them.

I actually planned a dinner for tonight! Apricot chicken in the crockpot, salad and maybe some kind of rice or something.

I think I may purchase a crockpot some day... but enlighten me... do you have to be present the whole time it's cooking? What if you leave the house for a few hours (ie: workout or worse... work?)? I like the idea of slow cooking...

Veggie burgers with sliced apples on the side. Again, I wasn't feeling terribly creative. I did, however, prepare black bean pattis for dinner tomorrow night - they need to sit 24 hour hours in order to set. Should be yum.
