Combine: 1 ½ cup brown sugar, 2/3 cup Veg. Oil and 1 egg, set aside.<br>
In another bowl combine: 1 C. Buttermilk, 1 t. baking soda, 1 t. salt and 1 t. vanilla. Combine these two bowls slowly and add 2 ½ cups of flour beating well after each addition. Fold in 1 ½ cups rhubarb and 1 ½ cups of nuts. Mix 2/3 cup of sugar and 1 T. of butter together, sprinkle over top.<br><br>
Bake @ 325 for 45 minutes.
