So I want a cajun style braised chicken w/ mushrooms tonight but don't have a recipe. I was thinking of seasoning w/ cajun spices & sauteing in a bit of butter & olive oil. Then saute some onion, garlic, & mushrooms. I'll add chicken stock for body and then finish w/ butter & parsley.<br><br>
What should I deglaze the pan with? Beer, bourbon? Do something else?<br><br>

I'm not the one who cooks sophisticated recipes in my house but... wine? If that makes no sense, ignore it. On the other hand, maybe I can just come over for dinner...
