i make a damned fine chocolate cake.

even if i won't eat it.

here's the recipe:

2 c flour
2 c sugar
3/4 c unsweetened cocoa powder
1 t salt
1 t powder
2 t soda

2 eggs
1 c melted butter (or sunflower oil)
1 c milk
1 c scalding hot espresso
2 t pure vanilla extract

oven at 325o.

sift together all the dry ingredients. mix the coffee, butter and milk together. pour into the dry ingredients. add the two eggs. beat thoroughly. stir in the vanilla.

bake in two 9" greased cake rounds for approx. 25 minutes.

frost with cream cheese frosting.

Ah, the things we do for love, like making a dreaded chocolate cake.

Looks delicious!
I'm going to make this for a special occasion next week.

I think I'll put some rasberry jam between the layers too.
I made this last night and it was delicious!

I just baked it in one pan. The oven bakes unevenly so it was a bit of a lava cake. I used instant coffee granules and water instead of espresso and it was fine. It's all I had on hand that was strong enough.

I made a cream cheese icing but didn't do the rasberry jelly like I planned.

Thanks, Witchy!

It tasted even better after sitting in the fridge overnight.
I hope it went well for him! Tell him "hello" for me.
Ganache scares me! It always gets too hard and heavy for me even if I follow a recipe.

Ganache is my nemesis!
