this has a much different flavour from my own apple cake, and is (as far as i'm concerned) far preferred over my apple cake.<br><br>
3 c unbleached flour<br>
1/2 t salt<br>
1 T powder<br>
2 c granulated sugar<br>
1 c corn or sunflower oil<br>
4 eggs<br>
1/4 c OJ<br>
2 t pure vanilla extract<br>
3 apples, peeled/cored/sliced<br><br>
mix together:<br>
1 T cinnamon<br>
2 T granulated sugar<br><br>
oven at 350. grease and flour a 10 cup tube pan.<br><br>
stire together the flour, salt, powder and 2 c sugar. add the oil, eggs, OJ, and vanilla. mix thoroughly to combine. pour 1/2 the batter into the pan. top with 1/2 the apples and sprinkle with half the sugar and cinnamon. add the rest of the batter. top with the remaining apples and cinnamon mixture.<br><br>
bake for approx. one and one half hours. let cool in the pan 10 minutes, then remove and cool on a rack.

This sounds so delicious, witchy!<br><br>
FYI for others who read this recipe: many Jewish cake recipes call for oil instead of butter (or other dairy products) so that you can eat them after a meat meal. This is a very typical cake to serve during the high holidays, when the apple harvest is coming in and we eat apples with honey for a sweet start to the New Year.
