I make these from time to time and bring to work. One of my co-workers bugged me for the recipe, so I wrote it up. Might as well share here too.<br><br><span style="text-decoration:underline;">Recipe: Lemon Bars</span><br><br>
Crust:<br>
Butter- 2 sticks<br>
Flour- 2 cups<br>
Powdered sugar- 1/2 cup<br><br>
Filling:<br>
4 eggs<br>
Sugar- 2 cups<br>
Flour- 4 tbsp<br>
Lemon juice- 1/4 cup<br>
Grated lemon peel- 1 tbsp<br><br>
Preheat oven 325F<br><br>
Crust: Blend butter, flour, powdered sugar. Pat into 13x9" pan. Bake 18-20 min.<br><br>
Filling: Blend eggs, sugar, flour, lemon juice, and lemon peel. Pour over baked crust. Bake 20 min.<br><br>
After cooling, top w/sifted powdered sugar. Cut into squares. Enjoy.
