I got this off of Sparkpeople. The originator called it Key Lime Cheesecake. I think its more like a pie, but very delicious. I used light cream cheese and regular cool whip. My son and nieces and nephews really liked it too.<br><br>
Key Lime Pie<br><br>
1 pkg sugar free lime flavored gelatin<br>
1/2 cup water<br>
16 oz fat free cream cheese<br>
12 oz key lime flavored fat free yogurt<br>
1 cup fat free whipped dessert topping<br>
1 reduced fat pre-made graham cracker crust<br><br>
Bring water to boil and add to gelatin, stirring until completely dissolved.<br>
Beat cream cheese with electric mixer until smooth.<br>
Blend in yogurt and dessert topping.<br>
Then slowly pour in gelatin and continue beating until thoroughly blended.<br>
Pour into premade crust and refrigerate until firm (about 3 hours).

We have one almost exactly like that, minus the cream cheese though.<br><br>
1/4 cup boiling water, add lime gelatin. Stir until dissolved. Add 2 Key Lime Pie Yoplait Custard yogurts. Stir it add, fold in a tub of light/reg cool whip. Mix and pour into Graham cracker crust.<br><br>
I made one in about 5 minutes and me and my buddy ate the whole thing by ourselves after our race on Tuesday. So yummy!

key lime pie with gelatin? blasphemy!<br><br>
1 can sweetened condensed milk<br>
1/2 c key lime juice<br>
4 egg yolks<br>
1 9" short crust pie crust, blind baked<br><br>
beat the milk, lime juice, and eggs in a non-reactive bowl. pour into the prepared crust. bake in a 350 degree oven for 15 minutes. remove from oven. refrigerate for at least 6 hours before serving.<br><br>
i garnish it with meringue. my mother uses whipped cream. use whichever.
