I got a bunch of kale in my produce box today. I usually make a kale casserole that has rice, red peppers, corn, and ricotta cheese, but I don't think I'm really in the mood for that this weekend. How do you cook kale? And how long will it keep if I don't use the whole bunch?

mine usually keeps about a week, or longer, in the vegetable drawer. I found this great recipe the other day, but i mixed the ingredients in a bowl, not in the pan:<br><br><b>Kale Chips--a.k.a Seriously Addictive Snack!</b><br><br>
Tasty way to eat your greens, plus they taste just like Lays potato chips (my old favorite)<br><br>
Ingredients (use vegan versions):<br><br>
1-2 big bunches of kale<br>
1 tablespoon apple cider vinegar<br>
1 tablespoon oil<br>
coarse salt (to taste) or favorite seasoning blend (we love hot n' spicy Spike)<br><br>
Directions:<br><br>
Pre-heat oven to 350.<br><br>
Wash and de-stem kale. Chop or tear into "chip" size pieces.<br><br>
Spread onto baking sheet. Pour the apple cider vinegar, oil and seasoning (1-2 tablespoons) onto kale. Mix to coat all pieces.<br><br>
Bake for 10 minutes or until crispy. Serve immediately!<br><br>
Serves: 3-4<br><br>
Preparation time: 3 minutes

i also like to put it in pasta dishes as well. <img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif">

I have a really good pot leek and kale soup recipe if you are interested, if so, i will dig it up and post it. It is a Moosewood recipe.

I ended up making <a href="http://allrecipes.com/Recipe/Sweet-Pepper-Pasta-Toss-with-Kale/Detail.aspx" target="_blank">this</a> pasta that had kale, red peppers, and feta cheese. Initally I only used half the bunch of kale, but ended up sauteeing the rest of the bunch and mixing it in. It was very good. (I used less pasta than the recipe called for, too.) Those chips sound good merigayle, I'll have to try them in a couple of weeks when I get the next produce box.

i made them with Chard the other day and it turned out good, i used too much salt though. Swiss Chard is my new favorite green. I have always eaten Kale, but was not in love with it, just it nutritional benefits. BUT, i LOVE swiss chard!!!!!!! I have been putting it in everything--- pasta, soup, stirfries <img alt="biggrin.gif" src="http://files.kickrunners.com/smilies/biggrin.gif">

I had Kale for the first time a few weeks ago - just de-stemmed it, steamed it, and tossed with a touch of olive oil and salt. Enjoyed it a lot.<br><br>
But, I've yet to meet a vegetable I haven't enjoyed.

I love kale! I usually buy a bunch at the market every week. I just de-stem it, steam it, then put on a little oil, rice wine vinegar and sprinkle a tiny bit of sugar on it and cook it for about another minute. Yum!
