Chicken Marsala over soft baked polenta - I love my baked polenta cheat....no constant stirring. <img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif">

yumm, polenta. Do you buy the tube, Hobey? That's really cheating, but that's what I do.<br><br>
For us tonight, vegetable/tempeh stew, portugese bread (with olive oil and crazy salt) and a salad. Crockpot is doing its thing all day. Can't get any easier than that!

No...this is the soft kind that's like porridge. <img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif"><br><br><b><i>Classic Baked Polenta</i></b><br>
1 c polenta or coarse stoneground cornmeal (I'm currently using a Piedmontese polenta from <a href="http://www.zingermans.com/" target="_blank">Zingerman's</a> but coarse cornmeal from <a href="http://www.bobsredmill.com/" target="_blank">Bob's Red Mill</a> is great too)<br>
3 1/4 c lukewarm water<br>
1 t salt<br>
1 T butter<br>
1/2 oz grated Parmesan<br><br>
Preheat oven to 350 and spray a 2 qt baking dish with cooking spray. Combine polenta, water, salt, and butter in the dish and stir with a fork until blended. Bake uncovered for 50 minutes. Run a fork through it and bake for an additional 10 minutes. Stir in cheese

Dinner tonight is DW job so i don't know what she and the kids are having i am probably going to have a gyro sandwich and fries after tonights run.

Not sure, probably leftovers of some sort with LOTS of broccoli. It was buy one get one free last weekend, and I went a little over the top....

Chicken Tortilla soup with avacado relish..........am thinking should I make a margarita too? Seems bad to eat avacados without a margarita?? LOL any excuse

Won Ton Soup. Then Mr T and I split General Chang's Chicken extra spicey! Steamed brown rice.

Didn't end up cooking. Too annoyed with work. Went out for sushi and had my favorite sushi chef take care of us.
