Well... i don't particularly like Trader Joe's... But I do like tilapia... I buy fresh tilapia fillets at my grocery store. I either ask them to add Cajun marinade or apply my own spice rub at home. I toss the fillets on my BBQ grill (though I live in New England, I keep it shoveled and grill year-round) for about 2 minutes on a side. The fish is pretty thin and fragile so make sure your grill is kept clean, apply a little oil before putting the fish on, and use a big flat spatula that you can get under the entire fillet. Don't overcook - they just need to turn white and "opaque" in the center.

We'll then eat them in tacos, in a fish sandwich, or just on a plate with sides. Ummm... good.

Costco carries panko tilapia too. Just saw it the other day. Any good battered or breaded frozen fish works.

John's grill method is an excellent alternative. I usually spritz a bit of lime juice and sprinkle on salt, pepper, and cumin when I grill for tacos.

Lime slaw recipe may be found in this thread...http://www.kickrunners.com/forum//sh...ad.php?t=20290

One thing the northeast is seriously missing is places to get good fish tacos. There's nothing here like there is in Cali. What I would give for Wahoo's Fish Tacos right now.

FWIW, the Super Wal*Mart near our house carries tortilla encrusted frozen tilapia. Is actually very good and makes a decent fish taco. It's just not the same though.

I get to go to Wahoos for the first time on Saturday!

I like to put blackened seasoning and lemon or lime on my tilapia and then I pan sear it. I spray the nonstick skillet with PAM and then add a little bit of oil and get the oil real hot. It cooks quickly so keep your eye on it.

I get Romero's corn tortillas (the 53 calorie ones).

I also chop up cabbage and make an aioli that I mix the cabbage in. Cayenne aioli-Light mayo, cayenne, lime juice and 1 clove pressed garlic.

Put it all together with some grated cheese and avocado slices and you're done.

The whole thing takes about 10 minutes to make. You can't go wrong!
