for variety, I use almond meal (also called almond flour) which is basically just finely crushed almonds. they have healthy fat, very little carb (if you watch that sort of thing) and add a lot of flavor. and while you can go the egg, flour, almond meal route, you can also just get away with the almond and nothing else.<br><br>
I like to mix in some cumin and spanish paprika b/c my DH likes that flavor combo.
