i am planning my xmas menu (and, as mr. poo and i are alone for xmas - neither of us wants to drive to the northern maine woods, we're probably having this and apple pie), and remembered this stuff. it's phenomenal. it's unbelievably wonderful wonderfulness, and you'll be hard pressed to not eat it straight out of the pan and burn the inside of your mouth.<br><br>
2# potatoes (starchy), sliced<br>
1# gruyere - the good shit, shredded<br>
2 sweet white onions, sliced<br>
3 cloves garlic<br>
approx. 1/4 c butter<br>
1 c heavy or whipping cream<br>
salt and pepper<br><br>
oven at 350o<br><br>
boil the potatoes for approx. 3 minutes in salted water. remove from heat, drain.<br><br>
in a saute pan, cook the garlic and onions in the butter until translucent. add salt and pepper to taste.<br><br>
layer the potatoes, onions, and half of the cheese in a casserole. pour the cream over the top. sprinkle the remaining cheese over the top. bake for approx. 45 minutes.
