What to do with that <i>thing</i> that's taken over your garden?</span></span><br><span style="font-size:large;"><span style="font-family:Arial;">A versatile recipe that works and works and works with the little green monsters.</span></span><br><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">2 cups sugar</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 cup oil</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">3 eggs</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">3 cups flour</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 tsp. salt</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 tsp. cinnamon</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 tsp. baking powder</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 tsp. baking soda</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">½ cup milk</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">2 cups grated zucchini</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">⅔ cup crushed walnuts or ¾ cup raisins or ⅔ cup chocolate chips</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Amounts can vary depending upon what you have on hand. This is a pretty forgiving recipe.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Preheat oven to 350F.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Blend together the sugar and oil, add eggs one at a time, beating well after each addition.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Sift together (or just mix... up to you), the flour, salt, cinnamon, baking powder, and baking soda. Add it alternately with the ½ cup milk to the sugar and oil mixture. Mix well.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Add to the mixture the zucchini and whatever of the other fillings you've decided on. Go on, put the chocolate chips in, you only live once.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Bake in two greased / floured medium loaf pans for one hour, OR in an Angel Food cake for one hour and ten minutes.</span></span>
