<span style="font-size:large;"><span style="font-family:Arial;"><b>Tofu Quiche</b></span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">One of two vegetarian quiches we in our recipe box.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Not including the piecrust - you're on your own for that.</span></span><br><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">2 cloves garlic, minced</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 onion, chopped</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">6 mushrooms, chopped</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">½ cup zucchini or spinach, chopped</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 tsp. herbs (basil, rosemary, thyme)</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 block (1lb.) tofu</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">13 oz. soymilk</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">Preheat the oven to 350F.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Fry the garlic, onion, mushies, zuke, and herbs in oil.</span></span><br><br><br><span style="font-size:large;"><span style="font-family:Arial;">Cream the tofu with the soymilk. Add the sautéed veggies and pour into the piecrust.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Bake for 45 minutes or until firm.</span></span>
