<span style="font-size:large;"><span style="font-family:Arial;"><b>Pecan Whiskey Smashed Sweet Potatoes</b></span></span><br><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">3 medium sweet potatoes, peeled and cut into chunks</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">3 tbsps. butter, cut into small pieces</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">½ cup chopped pecans (a couple of handfuls, really)</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">3 tbsps. brown sugar</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">2 oz. Whiskey (Rye for Canajuns, Bourbon for Merkuns)</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">½ cup orange juice</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">¼ to ½ tsp. freshly grated nutmeg (or cinnamon)</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">salt and pepper to taste</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">A bit early in the year perhaps for this, but the nights are getting cooler up here and there has been a hint of fall in the air.</span></span><br><br><span style="font-family:Arial;"><span style="font-size:large;">Bring a medium pot of water to the boil. Add the sweet potatoes and cook until very tender (about 15 minutes). Drain them in a colander.</span></span><br><br><span style="font-family:Arial;"><span style="font-size:large;">Using the same pan, melt the butter over a medium heat and add the pecans. Toast for 2 minutes. Add the sugar and let the mixture bubble. Add the bourbon and cook out the alcohol, about 1 minute or so. Finally add the OJ and the cooked sweet potatoes. Smash them and season with nutmeg (and/or cinnamon), salt and pepper.</span></span>
