Missus Grizz is allergic to the eggplant so it is unlikely I'll attempt it any time soon.</span></span><br><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 eggplant, peeled</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">2 tbsp. fresh garlic, minced</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 oz. olive oil</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">¼ cup white vinegar</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">½ cup tomato sauce</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">¼ cup fresh parsley, chopped</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Slice the eggplant ½-inch thick and deep-fry it in Canola until golden brown. Let it cool and chop roughly by hand.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Heat the olive oil in a skillet and sauté the garlic until golden. Deglaze the pan with the vinegar and add it to the eggplant. Mix in the tomato sauce and add in the fresh parsley. Serve cold.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">You can use this as a sort of dip with wedges of pita bread.</span></span>
