ACK!!!</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">This recipe is Charmaine Solomon's from one of her fantastic vegetarian cookbooks.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Pick over the lentils, discarding any discoloured ones or small stones. Wash them well, pouring off any that float. Drain and put into a saucepan with the diced onion and half of the garlic. Add the cinnamon, peppercorns and bay leaves - and water - and bring to a boil. Cover and simmer until the lentils and onions are quite soft. Strain through a sieve, reserving the liquid, to puree the lentils and discard the spices.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Heat the ghee or oil in a saucepan, fry the onion, and curry until the onion is very brown. (Usually good to do this on a medium - low heat so as not to burn the onions. Brown does not mean burn!) This might take a while. Add the lentils, reserved liquid, salt and Garam Masala and simmer for a minute or two.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">She calls for coconut milk to make it a richer soup. If you wish, I think you could probably add 8 oz. of soup stock. In fact, we often use soup stock instead of the water in the recipe.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Serves 4.</span></span>
