<span style="font-size:large;"><span style="font-family:Arial;"><b>Black Bean Soup</b></span></span><br><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 tbsp. vegetable oil</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 large onion</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">2 cloves garlic</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">4 cups broccoli, chopped coarse</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">3 cups vegetable stock/bouillon</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">4 cups potato, diced</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">1 cup or one small can black beans, drained</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">salt and pepper to taste</span></span><br><span style="font-family:Symbol;"><span style="font-size:large;">·</span></span> <span style="font-size:large;"><span style="font-family:Arial;">an ounce or so of wine or sherry to taste</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Heat oil over medium heat, sauté onions and garlic.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Add broccoli, stock, and potatoes and cook 20 minutes covered.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Process half of the soup in a food processor until pureed. Return to soup remaining in pot and season. This can be served with grated cheese on top. I've added some spirits to it from time to time to give it an extra zing.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;">Again, a recipe that can be either vegetarian or not. Goes well with a foccacia recipe that I’ve included in this forum.</span></span><br><br><span style="font-size:large;"><span style="font-family:Arial;"><b>Food memory:</b> I was project manager an this new kid had just joined the team, moved in from the wet coast and I knew how hard it was to make connections. We invited him and his family over for supper, and his wife insisted on bringing something, but "freaked" (his words) when she found out we were vegetarian. Not sure where she got this recipe, but it has since become a staple in her family and one we trot out now and again - it's easy and good, particularly on fall days after outdoor activities!</span></span>

Broccoli, potatoes, and black beans are some of my favorite things, though I don't usually have them together. I can't wait to make this!

It's not really needed, just adds a certain something.
