<p><strong>Fun</strong>:  My dept hosted breakfast for our MS teaching staff this morning in appreciation for the very hectic couple of weeks of state testing that we all just survived.  I brought in 2 baked French Toast casseroles - 1 caramel pecan and 1 cinnamon sugar blackberry.  Along with a crockpot of turkey sausage.  SO good!</p>

<p>I will happily share the recipes - they're not <em>that</em> bad for you. <span><img alt="biggrin.gif" src="http://files.kickrunners.com/smilies/biggrin.gif" style="width:16px;height:16px;"></span>   I make it every Christmas morning or when we have company.</p>
<p> </p>
<p>For each casserole I used:</p>
<p> </p>
<p>1 loaf bread (can use French, but I like Italian better) sliced 3/4 to 1 inch</p>
<p>5 eggs</p>
<p>1c half and half</p>
<p>1.5c milk (I used skim)</p>
<p>1t vanilla</p>
<p> </p>
<p>Spray a 13x9 casserole with non-stick spray. Mix eggs, h&h, milk and vanilla. Layer bread slices in dish.  Pour egg mixture over.  Let set in fridge overnight. </p>
<p> </p>
<p>For caramel pecan topping - before baking, combine 1/2c melted butter with 1c brown sugar and 1c chopped pecans, cover bread with mixture</p>
<p>For cinnamon sugar blackberry - before baking, top the casserole with blackberries, sprinkle with 2-3T cinnamon sugar</p>

<p>Bake at 350* for 40-50 minutes.<span style="display:none;"> </span></p>

<p>I made 2 of these, but the bread seemed to need more liquid (I think b/c I used the Italian instead of French bread), so I made another egg-milk mixture (same amounts) and split it b/w the 2 (ended up using almost all of it) and it was perfect. </p>

<p>The quick news is - I got a job!!   Starting Monday, I will be working at a small firm in North Philly.   I'll be doing some criminal defense and some civil litigation as well.  Hopefully a bit more civil work!!   Although, it won't hurt to get familiar with the criminal justice system in Philly.   There are some good things about it and some things that aren't so great (no benefits is a BIG one).   But, I like the people.  That's a great start.   And, I get to keep teaching at Widener at night, which ROCKS.</p>
<p> </p>
<p>This has been an incredibly difficult journey.  I knew the economy was in the toilet, and that the legal market had been hit equally hard.  But honestly, I had no idea it would take EIGHT FREAKING MONTHS to land a job.  Ugh.  Along the way, there have been some serious disappointments, and one unbelievable body blow recently.  It's been a challenge to keep a positive attitude about it, so please forgive me for not coming in here and sharing.</p>

<p>I have TONS to catch up on with all of you, and I am looking forward to it.   Thank you all for the job vibes that were sent out repeatedly!!! </p>
