Well after last night's Valentines Day corn dog I thought I'd go all out tonight and have a tuna melt for dinner.<br><br>
I have a 2 hour drive to my parents house tonight so I'm assuming something fast and easy will be the name of the game.

I am making a pancette, chicken, and asparagus pasta. I haven't had pasta in a month but found this recipe in Cooking Light. Gonna have a salad to go with it.

What is Zingy Mountain Pie?<br><br>
Well after the steak & cholesterol fest yesterday, I'm in the mood for something lighter.<br><br>
Warm White Bean & Winter Squash salad for us tonight. Maybe with some bruschetta.

pizza flatbreads (Naan with canned diced tomatoes, olives, garlic, and asiago cheese), salad. 1/2 price Valentine's Day chocolate <img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif">

Hopefully something light after shoveling obscene amounts of pizza down my gullet last night. Ugh. So good. And yet so bad.

Gently Fry 2 onions and a clove of garlic in olive oil - when softened add 500g Minced Beef (Ground Beef) fry until browned add 1 tin of chopped tomatoes 2 Table spoons of Worcestershire sauce 2 T spoons or Marmite (Vegemite) salt and pepper and simmer for 30 mins<br><br>
Meanwhile boil carrots and potatoes until cooked and mash together with a little butter and some cheddar cheese .<br><br>
Potion the mince into individual ramekins<br><br>
Slice some corgettes (Zucchini) thinely and place on top of meat mixture - Top with a heaped pile of the mashed potatoe and carrot mix (making it mound up in the middle ) and brown under the grill for 10 minutes<br><br>

Probably italian sausage/bell pepper/onion hoagies. Yum! Although my 7-year-old got angry when I told him that was what we were having. "But I hate that!" So be hungry then, little dude. <img alt="wink.gif" src="http://files.kickrunners.com/smilies/wink.gif">
