I bought some eggplant, peeled and diced it, and it's now in the fridge, with some salt. I am interested in preparing it tomorrow, in a "new" way. I do not eat cheese or cheese substitutes, so no eggplant parmesan. Any good suggestions???? Please ??????

Rattatouille? (sp?)<br>
Stirfry it with some broccolini in chinese garlic sauce<br>
cook it in tomato sauce and eat over pasta

Also try googling a Persian recipe for khoresh bademjan (not sure about the spelling) That is basically an Eggplant stew you serve over Basmati rice.

i just made Ratatouille last night sort of<br><br>
sautee tons of garlic and onions then add squash, eggplant ,zuchinni and tomatoes basil and what every seasonings you want...simmer for 15 more minutes and pour over pasta rice etc.. i used whole wheat egg noodles.. it was sooo colorful and pretty and YUMMY<br>
my whole family ate it..
