<p>1 T Olive Oil</p>
<p>1/2 cup chopped onion</p>
<p>1 bag frozen shelled edamame</p>
<p>1 c frozen corn</p>
<p>2 T water</p>
<p>1 can diced tomatoes</p>
<p>1 red pepper, cut into strips (this wasn't in the original recipe but I had it on hand and threw it in)</p>
<p>1/2 tsp dried thyme</p>
<p>1/2 tsp kosher salt</p>

<p>Heat olive oil in a 10-inch skillet. <br>
Saute onions in olive oil 3-5 minutes or until soft.<br>
Add the red pepper, frozen edamame, and frozen corn with the water, cover and simmer 5-7 minutes.<br>
Add tomatoes, thyme, and salt and heat through.<br>
Serve.</p>
