Julie-I love white chili w/chicken. If you're just using white beans (great northern and butter beans for me) I like to garnish w/a little cilantro, fresh tomato and white cheddar. A little lime juice is good too.<img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif"> Great, now I'm hungry.

I have a whole bowl of strawberries in my fridge that I could INHALE right now, if I could just get enough suction between work and my house.<br><br>

late night tonight, so probably a light frozen pizza I found at the store.<br><br>
But I have chili and lasagna on tap for later this week. Mmmm...

I never measure for these so here goes....<br><br>
Indian Meatballs<br>
1 lb ground beef or lamb<br>
1 small onion, minced fine<br>
2-3 cloves garlic, minced fine<br>
1 inch piece of fresh ginger, minced fine<br>
1/4 c finely chopped cilantro<br>
1/4-1/2 c plain dry bread crumbs, just enough to bind it all<br>
1 t ground cumin<br>
1 t kosher salt<br>
1/2 t ground black pepper<br>
1 t garam masala (optional)<br><br>
Mix it all together and form into 2-3 inch round balls or torpedoes. You can pan fry them. I like to bake mine. I make them round and just a little too big to fit in the bowl of a mini muffin cup. I plop them on top of the cups so there's room for the grease to drip off and bake them for 20 minutes at 400 degrees.<br><br><span style="font-family:'&quot';"><span style="font-family:Verdana;"><span style="font-size:small;">I usually make a simple lentil porridge with yellow lentils and mix in a "tadka" made of sauteed onion, garlic, cumin seeds after the lentils are cooked.<br><br>
Served with frozen naan I get from the Asian supermarket or Trader Joe's.<br></span></span><br></span>
