We are trying to incorporate more beans into our diet and really limit the potatoes and pasta thing.<br><br>
So I need some help. I bought some white beans yesterday and had them soaking overnight. I haven't made white beans yet. Have had black beans, kidney beans, and lentils. All yummy. Any ideas on what to do with the white beans. I don't want a soup or stew, I want to use them as a side dish with Chicken, or maybe the leftover steak from last night (in which case I would be up for a stew or soup).<br><br>

PS: Last night I roasted green beans for the first time. OMG They were awesome!! A little olive oil, salt and pepper and when they were done topped with a little fresh parm cheese. Vegatables are interesting again!!

Kristine, you could boil the beans until they are done (like an hour or so if they've been soaking overnight), drain and add a can of diced tomatoes (or stewed, or more than 1 can depending on your preference), add a little olive oil, seasoned salt or other seasonings, and serve as a side dish. I'm having something of that sort for lunch today, with navy beans. It's also good with some grated cheese on top.<br><br>
Dinner for me, not sure. I have to go to the grocery store at lunch or after work. We might go for nachos at our favorite Mexican place. That would certainly be easy!

Kristine....put them in the crockpot and make Baked Beans out of them. So yummy. Tons of recipes on the web if you don't have one. If you don't want to use salt pork or bacon, look for a vegetarian version.<br><br>
We are having baked ham, mashed potatoes, some kind of bread....soda bread or the like probably, veggies.

Beth: That bean recipe sounds awesome...I bet some basil, crushed red pepper and parm cheese would be good <img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif"><br><br>
Tonight we are having the Roman seafood stew again that I made last week......it was awesome, the best part was the broth that you soak up with garlic bread.

I make a Tuscan white bean puree to serve alongside grilled meats sometime. Boil the beans until they're done with a sprig of rosemary and a couple of whole garlic cloves. Discard the rosemary and chop up the garlic & set aside. Mash the beans roughly. Heat some olive oil in a pan and lightly saute some diced onion then add the garlic. Add the mashed beans and heat through. Remove from heat and stir in a glug of fruity extra virgin olive oil. Salt & pepper to taste. I usually serve it alongside grilled pork rubbed with fennel but chicken & steak would be good as well.<br><br>
Spaghetti with clam sauce for us tonight.<br><br>

Looks like we're having light linguine carbonara tonight. Weather is looking crappy all weekend, might be a good time for a big ol' pot of Sunday chili.

Haven't decided but am getting ideas... Probably leftover traditional chinese veggie dish my mom made for me for Chinese New Year dinner...
