1-2 lbs ground deer ( u could use other venison or beef )
1 med red bell pepper diced
1 med sweet onion diced
2 celery stalks diced
1 pkg McCormiks HOT chili seasoning
1 15 oz can stewed tomatoes
1 15 oz can chili beans

In a dutch over brown meat over med. heat until done. You can then remove and drain fat, but I don't, I think it just takes away flavor from the chili. Add onions and cover. Cook for about 8 mins. Add pepper, and celery. Cover. Let cook for another 8 mins. Now add chili mix and some water, I just go by whatever it says on the back of the package. Cover and cook for 10 mins. Then add tomatoes and beans, cover, and cook for at least 20 mins before serving. You can turn it down to a simmer and cook it for an hour or two, just be sure it doesn't reduce too much, you may have to add water. Serve with grated american cheese on top.
