I made the best red curry I have ever attempted on Friday night. It was so yummy that I ate way more than I should have.<br><br><br>
I dont know why it has never turned out so well before. <img alt="confused.gif" src="http://files.kickrunners.com/smilies/confused.gif"><br><br>
How do yall do curry?

I've never made it from scratch, I use those curry sauce mixes you can buy in the asian section of the grocery store.<br><br><img alt="" src="http://ecx.images-amazon.com/images/I/41PQ2AQ4TTL._AA280_.jpg" style="border:0px solid;"><br><br>
Very easy, very tasty.

meat from one rotisserie chicken<br>
1 cup julienned carrots<br>
1 medium onion, minced<br>
3 cloves garlic, crushed<br>
1 Tbsp currry powder<br>
1 cup golden raisins<br>
1 cup coconut milk<br><br>
serve over couscous, garnish with thinnly sliced scallions
