<p>I picked up a crock pot over the winter and have taken to it as a main source of providing meals. I gotta tell ya - you just can't go wrong with one! I'll make a crock pot soup and live off it all week.</p>
<p> </p>
<p>This weeks treat: Spicy Bean Soup.</p>
<p> </p>
<p>I've gotten into the habit of buying dry beans and using those as the basis of my crock pot soups. I buy a bag of 15 bean packages.</p>
<p> </p>
<p>Here's todays concoction: To use the beans, I soak them overnight in the fridge.</p>
<p> </p>
<p>One bag of soaked beans (15 bean package)</p>
<p>One can of whole peeled tomatoes (cut up)</p>
<p>One small can of diced jalapeno peppers</p>
<p>One small can of diced poblano peppers</p>
<p>Two small cans of Casserra salsa</p>
<p>One can of drained Sweet Corn</p>
<p>About 2 cups of V8 vegetable juice</p>
<p>Ample amount of Cajun spice</p>

<p>Crock pot on high for about 8 hours or so.. The aroma is beginning to waif upward to the loft.. It's gonna be mmm.mmmm good!</p>

<p>Anyone else like crock pots? Share your best concoction </p>

<p>Lots, but they're all vegehoovian.  Ours is getting a workout tonight - Lentil/Quinoa and vegetable stew.</p>

I've been doing primarily vegetarian in the crock pot as well - though I did make some Jim Beam Black BBQ Ribs earlier this winter - definitely hit the spot! </p>

<p>I also want to make <a href="http://www.kickrunners.com/forum/thread/43682/lilly-and-voodoo-s-crock-pot-ribs">this one</a> someday.  There have been too many rave reviews around here about those ribs. </p>

<p id="user_yui_3_3_0_6_1300651988274118">Here's my recipe.  Beware, it fills a 7 quart crock pot to the brim...I froze the leftovers.  We're still eating it a week and a half later.</p>

<p>Here's the ingredients.  Not too much chopping.  Everything (except for the pasta) cooked in a crock pot on low for 8 hours.</p>

<p>4 - 14.5 oz cans low sodium vegetable broth</p>
<p>1 - 28 oz can diced tomatoes (no salt added if possible)</p>
<p>1 - 28 oz can crushed tomatoes (no salt added if possible)</p>
<p>1 - 14.5 oz can kidney beans with liquid (no salt added if possible)</p>
<p id="user_yui_3_3_0_6_1300651988274119">1 - 14.5 oz can cannellini beans with liquid (or Navy or Great Northern beans, no salt added if possible)</p>
<p>1 - lb package frozen Italian style green beans (the flat wide ones)</p>
<p>2 - celery stalks chopped</p>
<p>2 - carrots chopped</p>
<p>1 - onion chopped</p>
<p>1 - potato cubed (your choice on if you want to peel it or not)</p>

<p id="user_yui_3_3_0_6_1300651988274123">1 1/2 tsp each - oregano, thyme, basil</p>

<p>This was the first time I made this batch - and as yours did - mine came out awesome as well! Two large bowls down in no time - perfect heat (as in spice) and very filling.</p>
