I just bought a crepe pan and am gathering recipes to try -- both savory and sweet. Anyone have any favorite filling suggestions?

Unfortunately I'm allergic to hazelnuts! But I think bananas with <i>dulce de leche</i> would be a good substitute! yum

A couple of weeks ago I had crepes with roasted vegetables (asparagus, carrots, and sweet potatoes), which was surprisingly delicious. I of course then followed them with sweet crepes--bananas, blueberries, strawberries, and whipped cream. Yum!

These combos sound great! I cribbed this from "Flip Happy Crepes"-they are here in Austin and were on "Throwdown with Bobby Flay". Considering these cost 6-8 bucks a piece, you're on to something by buying your own pan. <img alt="smile.gif" src="http://files.kickrunners.com/smilies/smile.gif"><br><br>
Roasted chicken w/ carmelized onions and goat cheese<br>
Roasted vegetables w/ feta buttermilk sauce<br>
Ham and gruyere cheese and green onions<br>
Shredded pork w/ cheddar cheese, pickles and tabasco sauce<br>
Three cheese crepe w/ carmelized onions<br>
Spinach, feta cheese, and roasted garlic<br>
Smoked salmon w/ herbed cream cheese spinach and tomato<br>
Roasted chicken, mushrooms, gruyere, carmelized onions<br>
Tarragon mushroom, gruyere, carmelized onion, spinach, tomato, chives<br>
Shredded pork with carmelized onions and gruyer

Crepes are a light & fluffy alternative to tortillas and can be used as such; you just want to keep the sauce/salsa level down as they get real soggy, real fast.

Thanks for all the great suggestions! Once I perfect some recipes, we're thinking about having a crepe party where our friends can assemble their own crepes with different filling options.<br><br>
Jacqibay, that was my thought in buying the pan. The closest crepe place to me is in Harvard Square, Cambridge and they're closer to 9 and 10 bucks each! (and aren't that great, IMHO) Thanks for the ideas!

Plain yogurt inside, perhaps with your choice of fresh fruit and honey drizzled on top!

That sounds like FUN! My mouth is watering for these 2 combos!<br>

1) cheesecake filling<br>
2) cold pudding<br>
3) fruit puree inside fruit salsa on top<br>
4) p.b. & bananas <img alt="banana.gif" src="http://files.kickrunners.com/smilies/banana.gif"><br>
5) prosciutto & mozz.

Galettes are a buckwheat crepe and are great with the sweet or savoury suggestions offered here. I tend to like savoury food, but I had a rhubarb galette that was UN-real. Yum!
