6 pears - i use comice or bosc, peeled, cored, and cut into chunks<br>
1 bag of cranberries, rinsed and picked through<br>
2 cinnamon sticks<br>
1/3 c brown sugar<br>
rind of 1/2 orange<br>
juice of 1 orange<br><br>
in a large sauce pan, combine all ingredients. cook over low heat until the pears are soft, and all of the cranberries have burst. remove the cinnamon sticks before serving.

i serve it as a side dish, genie.<br><br>
'though it's quite good if you <i>dice</i> the pears, add a drop of red wine, some crystallized ginger (in which case i use honey instead of brown sugar), and then cook as directed in the recipe to serve with lamb or pork.
