(not sure if I can post this here?)<br><br><b>Cinnamuffins</b><br><br>
1/4 cup oil<br>
1/2 cup molasses<br>
1 cup applesauce<br><br>
1 1/2 cup whole wheat flour<br>
1/2 tsp baking soda<br>
1 1/2 tsp baking powder<br>
3/4 tsp cinnamon<br>
pinch of cloves<br>
1/2 tsp salt<br>
1/2 cup raisins or nuts (optional)<br><br>
Preheat oven to 375 degrees Farenheit. Grease a 12 cup muffin tin.<br>
Mix oil, molasses, and applesauce.<br>
Sift together flour, baking soda, baking powder, cinnamon, cloves and salt. Stir together wet and dry ingredients and raisins/nuts.<br>
Drop into muffin tins.<br><br>
Bake 18-20 minutes.<br>

I make this frequently because I always have the ingredients on hand. It happens to be vegan too!<br>
Those who eat dairy might enjoy crumbling a couple of these muffins into a bowl and topping with plain Russian, Bulgarian or Greek yogurt-none of that pectin-ized jello-y garbage that most people call yogurt.<br><br>
