2T yeast<br>
1/2 c honey<br>
1T salt<br>
5.5 - 6 c flour<br>
1.75 c water (120o)<br>
4 eggs<br>
1 stick unsalted butter<br><br>
1T heavy cream<br>
1 egg yolk<br><br>
in a small bowl, combine water and yeast (i typically add 1T of brown sugar to help yeast proof). let sit 5 to 10 minutes.<br><br>
in large bowl combine honey, salt and 2 c flour. mix to combine. add yeast/liquid, eggs, and butter and rest of flour (until dough is of proper consistency - if you're a breadmaker, you'll know). let rise 1 to 1.5 hours. punch down. let rise again (approx. until double). braid dough together - makes either one large loaf or two smaller loaves. let sit for 30 minutes.<br><br>
in a small bowl, combine the heavy cream and egg yolk. brush over tops of loaves. bake in a 350o oven for 40 to 45 minutes (if making one large loaf).<br><br>
if you do not live at high altitude, you should only have to let it rise once.

Mmmmmmm.<br><br>
I wanna make it, and I've never had Challah except from a grocery store, and who know whether that's made correctly?
