Just curious. I saw some things on line about microwaving scrambled eggs. Is it possible and does it turn out ok? I am curious as i would like to eat eggs for lunch, but only have a microwave at work.

From the eggbeaters site:
http://www.eggbeaters.com/tips/tips.jsp

Microwave Scrambling:
Pour the desired amount of Egg Beaters into a microwave-safe bowl. Cover and cook at high (100%) power for 1 minute. Stir. Cook 1/2 to 1 minute more until set but slightly moist.

My friend used to scramble eggs in the microwave like this, and they were good, but bowl-shaped.

i know it sounds really gross, but i know that egg beaters are the best low calorie high protein option sometimes.

one of my fave brekkies [usually brekky#1 at 5:45am] is a half cup of egg beaters (or Better 'n' Eggs) scrambled with some onions/pprs and made into a sammich with two sliced of Ezekiel brand raisin toast

For some reason I like eggbeaters, and not eggs.

I have microwaved them, but they seem runny, still. Like there is always yellow liquid floating around at the bottom of my bowl, and that make me want to hurl.

What I've done is pour a carton of it into a 8x8 baking dish (add salsa, or whatever you like), bake it for 40 minutes or so (until done), cut into four squares, and refrigerate. Then I reheat them in the microwave the next morning and make healthy egg mcmuffins.

I've had success with microwaving them. And if you use a coffee cup, they turn out just the right diameter to fit on your English muffin!
