I use 4 egg whites, 1/2 c. oats, about a 1/4 c. water, 2 packets of Equal (or you can use the stuff that measures like sugar and do like 2 T.), a dash of cinnamon and a dash of salt.<br><br>
I whip it all together with a spoon for like 30 seconds til the eggs get "full or frothy". Then, I let it sit while I put on my make-up so the oats can soak up the water a bit. Then I pour it into an omellette pan sprayed with PAM cooking spray. Let it cook on one side til it is lightly browned and then flip.<br><br>
I use spray butter and low sugar syrup. Or if I had a longer run before hand I top it with PB. The pancake itself is HUGE and only 222 calories<br><br>

I already made this recipe, since it sounded so good. And it was!<br>
I halved the proportions, and used 1 whole egg vs 2 egg whites, used a bit of real sugar vs. Splenda (after the baby comes, I'll go back to using more Splenda) and it was delicious. And I'm so happy that it was healthier than white flour pancakes.<br><br>
I might have to throw in some blueberries or other fruit next time!
