apple honey cake

2 1/2 c all purpose unbleached flour<br>
2 t baking soda<br>
2 t salt<br>
1 1/2 c brown sugar<br>
1/2 c clover honey<br>
2 eggs<br>
1 1/2 sticks unsalted butter<br>
6 apples, peeled, cored, and sliced<br>
2 t ground cinnamon<br>
1 t nutmeg<br>
1 t allspice<br>
1 t ground ginger (you may sub. with crystallized ginger in syrup, if you wish)<br><br>
oven at 350o.<br><br>
grease and flour a 10 c bundt pan (this is very important; i always forget to do so, and i end up digging the cake out of the pan with a serving spoon).<br><br>
cream the butter and sugar together in a bowl. add the honey and eggs. beat.<br><br>
in another bowl, combine all of the dry ingredients, incl. the spices. mix.<br><br>
add the flour to the butter/egg mixture. beat to combine. stir in the apples.<br><br>
pour into the bundt pan. bake for at least one hour. it will probably require 1hr 20min. but, check it every 5 minutes after an hour has elapsed.

i forgot two ingredients...<br><br>
when folding in the apples, add 1/2 c raisins, and 1/2 c walnuts.<br><br>
of course, if you're a cretin like wyrillco, you can omit the raisins.
not at all.<br><br>
at your altitude, you'll want to increase the amount of flour by 1/4 c. and increase the baking temp. to 375 for 15 minutes, and then reduce for the remainder. otherwise, you'll get a sloppy mess.
