2 1/2 c all purpose unbleached flour
2 t baking soda
2 t salt
1 1/2 c brown sugar
1/2 c clover honey
2 eggs
1 1/2 sticks unsalted butter
6 apples, peeled, cored, and sliced
2 t ground cinnamon
1 t nutmeg
1 t allspice
1 t ground ginger (you may sub. with crystallized ginger in syrup, if you wish)

oven at 350o.

grease and flour a 10 c bundt pan (this is very important; i always forget to do so, and i end up digging the cake out of the pan with a serving spoon).

cream the butter and sugar together in a bowl. add the honey and eggs. beat.

in another bowl, combine all of the dry ingredients, incl. the spices. mix.

add the flour to the butter/egg mixture. beat to combine. stir in the apples.

pour into the bundt pan. bake for at least one hour. it will probably require 1hr 20min. but, check it every 5 minutes after an hour has elapsed.

not at all.

at your altitude, you'll want to increase the amount of flour by 1/4 c. and increase the baking temp. to 375 for 15 minutes, and then reduce for the remainder. otherwise, you'll get a sloppy mess.

And the nuts. Nuts don't belong in cake or cookies. They belong in little dishes where I can shovel them in in all their salty goodness.
