I can't really call this anything as exalted as a recipe, b/c I used one of those "just add water" mixes, but decided to revamp the box instructions and substitute apple juice. Also added some cinnamon and raisons to the batter, so got a nice, tasty bunch of pancakes w/ a little more ... "lilt" to them.

On other occasions, I've thrown in blueberries or dried cranberries, also a 1/4 tsp. of orange marmalade.

Anyone else have favorite "pancake tweaks"?

Sometimes I add rolled oats and pumpkin puree.

Ooh, I've tried blueberries, blackberries, and cranberries (no, not all at once). Very good.

This may be an obvious tweak: add some mashed, possibly overripe banana and chopped walnuts. It's heavenly, especially in whole-wheat pancakes. Spread with peanut butter and real maple syrup and you won't be hungry until late afternoon.

Hodgkin's Mills Whole Wheat pancake mix is the best OOTB mix I've ever had. I like to add blueberries or bananas and walnuts. I make them into shapes and the kids gobble them up. Me too no matter what shape.

I think that's what "makes" the OOTB pancake mix I mentioned above. It has cornmeal. BTW, cornmeal is also excellent dusted on the bottom of pizza right before you bake it.

My kid ask all year for chocolate chips in the pancakes.

Thanks for the bump, I just pulled my frozen pumpkin puree from the freezer.
