2 C. Flour ½ C. Butter + 1 Tbsp.
1 t. Baking Pow. 1 1/3 C. Brown Sug.
1 t. Baking Soda 2 Eggs
½ t. Salt 1 t. Vanilla
1 C. Sour Cream
Combine flour, baking powder, salt, and baking soda in a small bowl. Cream ½ cup of butter in another bowl and add 1 cup of the brown sugar, beat until fluffy. Beat in eggs, one at a time. Add vanilla until blended. Alternate adding flour mixture and sour cream. Add 2 cups of chopped rhubarb. Pour into muffin tins.
Topping: 1/3 cup brown sugar, and 1 T. butter. Mix together and sprinkle over muffins before you bake them.
Bake @ 350 for 15-20 min. Makes 24 small muffins.
