one 9" blind-baked single-crust pie shell
6 lg eggs
1 c cream
1 c sugar
2/3 c lemon juice
1 T minced lemon rind

mix all ingredients together. whisk until thick. pour into the pie shell and bake at 300o for 1 hour.

3 egg whites
1/4 t cream of tartar
6 T sugar

beat together the whites and tartar until frothy. add the sugar gradually, continuing to beat until the meringue is stiff and glossy (not foamy). spread atop the hot pie filling, then bake for 8 to 10 minutes at 400o.

Oh, I will have to try this since I have not been able to get my usual lemon meringue pie to work since I moved to VT 13 years ago. This might just do it.
