this has a much different flavour from my own apple cake, and is (as far as i'm concerned) far preferred over my apple cake.

3 c unbleached flour
1/2 t salt
1 T powder
2 c granulated sugar
1 c corn or sunflower oil
4 eggs
1/4 c OJ
2 t pure vanilla extract
3 apples, peeled/cored/sliced

mix together:
1 T cinnamon
2 T granulated sugar

oven at 350. grease and flour a 10 cup tube pan.

stire together the flour, salt, powder and 2 c sugar. add the oil, eggs, OJ, and vanilla. mix thoroughly to combine. pour 1/2 the batter into the pan. top with 1/2 the apples and sprinkle with half the sugar and cinnamon. add the rest of the batter. top with the remaining apples and cinnamon mixture.

bake for approx. one and one half hours. let cool in the pan 10 minutes, then remove and cool on a rack.
