Fruit and Rice Cobbler
Disclaimer: I have yet to try this one at home, it is a recent addition to the recipe box, a gift from a friend whose dessert was quite tasty, chewy, and juicy. Experiment before serving to company!
· ¼ cup lemon juice
· 1 cup honey
· 6-8 peaches, apples or pears (we had apples), chopped
· ¾ tsp. cinnamon - or more to taste
· 1/8⅛ tsp. each nutmeg, ginger (we had more ginger apparently)
· ⅓ cup raisins
· ⅔ cup chopped walnuts
· 3 cups cooked brown rice
· 2 tbsp. butter or margarine
Preheat oven to 350F. Mix lemon juice and honey and add to chopped fruit. Sprinkle on spices, add raisins and nuts, and mix together.
Lightly oil an 8x8 inch glass baking dish. Put half the rice in a layer on the bottom, layer on half the fruit mixture next and dot with 1 tbsp. of butter or margarine. Then repeat.
Press down firmly. Sprinkle the top with extra spice if desired, or wheat germ, or even -ugh- coconut. Cover with foil and bake at 350F for 30-40 minutes until fruit is tender. Makes 6-8 servings.
