Tortellini Stew -

Here is a wonderful tortellini stew I made last night. I mostly winged it, but it tunred out pretty fab. I had tons of leftovers so I froze some of it.

1 onion, finely chopped
2 (15 oz.) cans vegetable broth
About 1 cup white wine
28 oz. can diced tomatoes with garlic and herbs, undrained
1/4 tsp. pepper
1 can artichoke hearts
2-3 carrots, finely chopped
3 garlic cloves, sliced
Big handful of snap peas
1 tbsp. dried basil leaves
16 oz. cheese tortellini (i used frozen)

Combine all ingredients except snap peas, basil, and tortellini in a large pot. Simmer for 45 minutes. Turn heat up to medium, add snap peas, basil and tortellini and let cook until tortellini is tender...about 8-10 minutes. Serve and enjoy!

Hm. Sounds excellent and I love artichoke hearts!

I'd probably modify it too, to suit my veggie tastes. Thanks for sharing!
