About a week or so ago, I downloaded the update for my iPhone 3G (the first one, not 3GS). Just now, I plugged it in to try to manually manage my music/podcasts/etc., and it won't allow me to in iTunes. Although all this stuff is on my phone, iTunes doesn't recognize any of it, and in fact it just shows the space being taken up as "other".

Has anyone else had this problem? Are there any easy fixes? I already tried rebooting.

I don't want to restore to factory settings because I'll lose all my contacts. (I don't have a mac, and haven't been able to figure out an easy way to back them up.)

You don't need a mac to save your contact, you can do it in Outlook.
One of the choices whn you back up id to back up to Outlook. Do that, then reset the phone to factory settings, then sync
