Sunchokes

Anyone ever had them?

 

I've been watching way too much Food Network lately, and they use them every once in a while.

 

Glad I looked them up, because if someone had said "Jerusalem Artichoke" to me, I would have said no way, since I really do NOT like artichokes.

 

Turns out they're not artichokes at all, and no one really knows why they're called that.

 

Anyway, I chopped them into about 1 inch squares, mixed them with chunks of red peppers and onions, tossed them in olive oil.  A little sea salt and ground black pepper.  Roasted that mixture for 50 minutes at 400.

 

They turned out awesome.  Tasted like roasted potatoes, but better.

 

But, they don't *cost* the same as potatoes.  Yoiks!  The 4 sunchokes I had (each was about 1/2 the size of my fist) ended up barely serving 4 of us, and cost $4.  A *whole* lot more than potatoes.

 

But, as an every once in a while treat, it's OK.

 

Now, of course, I read a little more, and it seems that some people can get a little, uh, gastrointestinal distress the next day.

 

Guess I'll find out.

My parents used to grow these.... they came back year after year.  The plant looked a little like a sunflower, but with the tubers you could dig up and eat.  We liked them best sliced and eaten raw with salt.

 

If you really love them, grow them!  They are super easy to cultivate.

I was reading that they can become almost weed-like.

oooh I love them! I cook them roasted as well, super yummy. Like a mix between potato and parsnip. They are pricey, but a nice treat :)

I *knew* that you would have tried them.  However, like Altoids mentioned, I have read, you drop a root into the ground, and they end up taking over.  So, I don't know why they're so expensive.
